Market, Jean-Georges Vongerichten's glitzy restaurant at the Shangri-La Hotel, employs much of the style and level of service that is available at the flagship in New York. The menu, from the executive chef David Foot, is of a piece with Mr. Vongerichten's French-Asian hybrid style, but skews more toward the Northwest.

We had the 5 course tasting menu and it was spectacular. First, we advised our waiter that we were in no rush and he respected our pace. After the amuse bouche we received our first course: seabream sushi on a crostini instead of rice. Tasty, but the crostini was italian style with a bit too much garlic that overpowered the delicate fish. That slight change (leaving out the garlic) would have made this a 5 start item.
Next came sweetbreads done just right with a slightly crispy texture, accompanied by a piece of roasted pumpkin (superb) and a mixture of nuts and chopped fruits and some bitter apple foam. The foam itself was bitter, but when mixed with the sweetbreads and pumpkin and nuts on one fork full it was delicious.
Next was a piece of skilfully perfectly cooked sablefish (cod) in a lentil miso broth. I died and went straight to heaven on this dish. No need to say anything more.
And then some soft tender venison done just right - crisp on the outside and tender soft in the middle. I was served with mashed purple potato (not eye appealing but good taste and texture) and piece of roasted apple - all went well together.
Dessert was a mixture of four or five delights which made a nice ending.
We also had the suggested wine pairing of BC wines - which were the best of the best and we were very happy with the choice - enough to write down the names and will buy some for home use.
We would both return and try the tasting menu again - it changes seasonally.


We enjoyed an excellent dinner of salads, and then perfectly cooked fish and short ribs. First class service. Vibrant bar scene. A very busy place, so reservations essential at this third floor restaurant.
